Snack Healthy with Sprouts
As you plan your snack menus for tennis matches this summer, consider making homemade fruit leather. It’s a simple, healthy snack to make and can provide a great boost of energy. It can also be stored in an air tight container for up to one month.
Homemade Fruit Leather
Ingredients
- 3 cups chopped ripe stone fruit (e.g. peaches, nectarines, plums, apricots, cherries)
- Agave Nectar to taste
Instructions
- Preheat oven to the lowest temperature your oven will go (usually somewhere between 140 and 170 degrees F). Line an 11x17 baking sheet with parchment paper. Set aside.
- Remove the skins and pits of the plums and give them a rough chop.
- Puree the plums and sweetener of your choice in a blender or food processor until smooth. Pour fruit mixture onto prepared baking sheet and spread evenly with a spatula.
- Place baking sheet in the oven and bake for 6-8 hours, until the fruit leather is set and the center is not tacky. Remove from oven and let cool to room temperature.
- Cut into strips using a pizza cutter or kitchen scissors. If you want to make fruit roll-ups, roll the strips in the parchment paper.
Store in an air-tight container for up to a month.
