Snack Healthy with Sprouts
As you plan your snack menus for tennis matches this summer, consider making homemade fruit leather. It’s a simple, healthy snack to make and can provide a great boost of energy. It can also be stored in an air tight container for up to one month. 

Homemade Fruit Leather

Ingredients

  • 3 cups chopped ripe stone fruit (e.g. peaches, nectarines, plums, apricots, cherries)
     
  • Agave Nectar to taste

Instructions

  1. Preheat oven to the lowest temperature your oven will go (usually somewhere between 140 and 170 degrees F). Line an 11x17 baking sheet with parchment paper. Set aside.
     
  2. Remove the skins and pits of the plums and give them a rough chop.
     
  3. Puree the plums and sweetener of your choice in a blender or food processor until smooth. Pour fruit mixture onto prepared baking sheet and spread evenly with a spatula.
     
  4. Place baking sheet in the oven and bake for 6-8 hours, until the fruit leather is set and the center is not tacky. Remove from oven and let cool to room temperature.
     
  5. Cut into strips using a pizza cutter or kitchen scissors. If you want to make fruit roll-ups, roll the strips in the parchment paper.


Store in an air-tight container for up to a month.
